My kids beg for me to make this dinner. I’m not sure why I don’t make it more often since it is super easy, cheap and constructed from basic pantry staples. My white sauce mix makes whipping this dish up at the end of a long day super easy. We eat large amounts of pasta at our house, so feel free to half the recipe if yours doesn’t eat a full pound of pasta at a single meal.
Chicken Fettuccine Alfredo
1 large chicken breast
1 pound Fettuccine (or Spaghetti)
1 c. White Sauce Mix
2 c. Milk
dash Onion Powder
dash Garlic Powder
1/2 c. Shredded Mozzarella Cheese
Heat oil in small frying pan. Generously season breast with salt, onion, garlic and italian seasonings. Fry 5-10 minutes per side till golden brown and cooked through. Remove from heat and let rest while you prepare the pasta and sauce. Cook pasta according to package directions. Meanwhile in a medium saucepan combine white sauce mix, milk, onion and garlic. Bring to a boil stirring constantly. Remove from heat and add cheese, mixing until melted. Combine pasta with sauce tossing to coat evenly. Slice Chicken and place on the top.
I purposely left off measurements for the seasonings, so if you like lots of onion and flavor use more. We are not onion lovers, so I only use a dash. The cheese is also optional. When I have some on hand I add it in. Any cheese adds a rich flavor and thickness to the sauce.
